Moink Balls

¨ 30 Store-bought precooked beef meatballs

¨ 1 lb Bacon

¨ 3 tablespoons BBQ rub

¨ 1/2 - 1 cup BBQ sauce

 

Instructions:

1. Cut bacon slices in half.

2. Wrap half a slice of bacon around the meat ball.

3. Secure each with toothpick or small bamboo skewer

4. Sprinkle with bbq rub

5. Preheat the grill to medium high heat. 375°F/190°C

6. Grill each until bacon is crispy and meatball warmed through.

7. In the last few minutes glaze with BBQ sauce.

 

 

Grilled Angel Food Cake Bites

 

¨ 1 store bought angel food cake cut into 2 inch (5cm) by 1 inch (2.5cm) cubes

¨ Cubed (1 inch (2.5cm) x 1 inch (2.5cm) fresh pineapple, peaches or nectarines

 

Instructions:

1. Thread angel food cake onto bamboo skewers

2. Thread 1 cube of fruit onto each end of the cake skewers

3. Whipped cream, finely chopped mint and lemon zest for garnish

4. Preheat the grill to medium high heat. 375°F/190°C

5. Grill each side until lightly caramelized (approx 2-3 minutes per side)

6. Whipped cream, finely chopped mint and lemon zest for garnish

 

 

Grilled Pork Satay

 

¨ 2 lbs pork loin

 

Instructions:

 

1. Cut pork loin in 4 inch (10cm) by 1 inch (2.5cm) lengths

2. Thread pork onto small bamboo skewers

3. Sprinkle with pork bbq rub (store bought or homemade)

4. Preheat the grill to medium high heat. 375°F/190°C

5. Grill each side for approx 3-4 minutes

6. Remove from grill and tent with foil rest for approx 5 minutes.

7. Serve with assorted dipping sauces.

Diva Q Cheesy ABT

12 Jalapeños seeded and halved.
1 pkg cream cheese
1 pkg bacon (reduced salt)
1/4 cup grated Romano
1/2 cup fresh grated Parmesan
1/2 cup grated smoked mozzarella
1/2 tsp gran garlic
1 tsp smoked ancho powder
1 tsp chipotle chili powder
1/2 onion finely diced
2 tsp franks hot

Mix all ingredients other that the jalapenos and bacon together. Fill the halves of the jalapenos with the mixture and wrap with bacon. Smoke at 225-250 until the cream cheese is bubbling out the edges the longer you smoke them the less hot they will be.

Diva Q Decadent Tart

Decadent Tart

3/4 c maple syrup
3/4 c corn syrup
1/2 c brown sugar
1 cup white sugar
5 whole eggs
2 egg yolks
1/4 c browned butter
1 large can ( 300 gr ) whole cashews roasted & salted
2-3 oz good chocolate melted for drizzling
1 baked tart shell

Preheat oven or smoker to 350

Combine all ingredients mix very well.
**Please note if the cashews are not salted add 1/2 tsp salt to the recipe.
Pour into tart shell bake for about 30 -40 minutes until it is set.

We use a basic pastry recipe for the crust that contains no sugar. You can use whatever type of crust you prefer. Store bought or homemade. We would not recommend anything sweet.
When cool drizzle melted chocolate over.  Serve with vanilla ice cream.
