Diva Q Citrus Chicken Brine

1 1/2 cups fresh squeezed blood oranges
6 cups water
3/4 cup kosher salt
1 tbsp black pepper
1 tbsp ground ginger
1 cup pure Canadian maple syrup
1 tsp red pepper flakes

Bring everything to a boil and then cool it all down

Brine up to 36 chicken thighs in this overnight. Rinse then BBQ or Grill

Diva Q Turkey Pot Pie with Biscuit Topping

Ingredients

1 large onion chopped
1 cup sliced fresh mushrooms
3/4 cup sliced celery (1-1/2 stalks)
1/2 cup chopped green pepper (1 small)
2 tablespoons butter
1 tsp poultry seasoning
1/3 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1-1/2 cups chicken broth
1 1/2 cup milk
2-1/2-3 cups leftover turkey
1 cup loose-pack frozen peas
1 1/2 cup mixed frozen veggies

Bisquick Topping:
3 cups Bisquick
3 eggs
2 cups milk

Directions:

In a large saucepan cook mushrooms, celery, and green pepper in hot butter over medium heat for 4 to 5 minutes or until vegetables are tender. Stir in the flour, poultry seasoning, salt, and pepper. Add broth and milk all at once. Cook and stir until thickened and bubbly. Stir in turkey veggies and peas. Pour into a 2-quart rectangular baking dish.

Mix up Bisquick topping and pour over turkey mixture in dish.

Bake, uncovered, in a 400 degree F oven for 30 to 35 minutes or until crust is golden brown. Let stand for 20 minutes before serving. Makes 8-10 servings servings. Well I guess it could probably serve 12 but heck we were hungry. lol

Just a note about the chicken broth mine was reduced sodium.

You may not need to add any other salt if yours is regular salt

Diva Q Smoked Turkey Cacciatore

Ingredients:

1 lg. Onion thinly sliced
1 med. Green bell pepper, chopped
about 2 cups or more diced smoked turkey
1 can white beans, drained and rinsed well
2 large cans roma tomatoes crushed
15 Mushrooms pieces and stems, cleaned and chopped
4 cloves of garlic
1 tsp oregano
2 tablespoons parsley chopped
EVOO -1 tbsp

Saute onions, mushrooms, green pepper and garlic till onions are a bit soft. Do not burn the garlic, add everything else and simmer for 1 hour.

Serve over your favorite Noodle

Diva Q East meets West Pork Loin

Marinate a whole pork tenderloin over night in these:

1/2 c red wine
1/2 c brown sugar
1/4 c red wine vinegar
1/4 c ketchup
1/4 c hoisin sauce
1 tsp 5 spice powder
2 tablespoons soya sauce
1 tsp ground ginger
1/2 tsp salt
1/2 tsp pepper
3 cloves garlic minced or chopped fine

The following day stuff with :
4 cups. Cornbread crumbled
1 onion finely minced sautéed in butter
a hand full of chives chopped fine, tsp of sage, some salt & pepper
mixed in an egg and enough chicken stock to make it easy to spread.

Smoke at 250 –275 F until internal temp was 155 then i rested it for 1/4 hr. Approx 1.5-2 hrs

Diva Q Homestyle Roasted Cream Corn

Ingredients:

·  8 cobs of corn roasted and cold

· 1/2 cup butter

· 1/2 cup flour

· 1/2 cup finely minced shallots

· 2-3 cups milk

· 3 tsp white sugar

· 1/4 tsp freshly grated nutmeg

· 1-2 tsp salt

· 1-2 tsp white pepper

 

Directions :

Cut the corn off of the cobs and set aside (a great use for leftover corn).

Mix the flour and the butter together in a saucepan and cook for a few minutes until they come together well to cook the flour.

With a whisk add 2 cups of the milk half a cup at a time continue to whisk at medium heat until it gets thick and bubbly.

Do not stop whisking or the flour will stick.

Add the corn, sugar, salt, pepper , nutmeg and sugar.

Mix well coating all of the kernels.

Add more milk if it is too thick for you or a little more butter.

Check for salt adjust for your tastes if necessary.

Does not need to come to a boil.

Good hot or cold.

Goes well with BBQ
